An adaptation of an Ina Garten recipe, this is a simple, easy go-to recipe for beef tenderloin. Some may find the prospect of cooking an entire beef tenderloin - a long thick piece of meat that can weigh anywhere from 3-6 pounds - intimidating, but nothing could be further from the truth. It's super easy: just season it as desired and stick it in the oven is really all it takes. It's a stress free, fool proof meal that's great for a dinner party. Make sure you get a really good quality beef tenderloin, preferably with the Chateaubriand cut, and always go with 100% grass-fed if you can get it.

Ingredients
- 1 whole beef tenderloin
- 2 Tbsp unsalted butter room temperature
- 1 Tbsp coarse salt
- 1 Tbsp coarse freshly ground black pepper
Instructions
- Preheat the oven to 500°F.
- Place the beef on a baking sheet and pat the outside dry with a paper towel. Spread the butter on with your hands. Sprinkle evenly with the salt and pepper.
- Roast in the oven for exactly 25 minutes for medium-rare and about 30 minutes for medium. Remove the beef from the oven, cover it tightly with aluminum foil, and allow it to rest at room temperature for about 10-20 minutes.
- Slice the filet thickly and serve with your choice of sauce.
