Bourbon Walnut Banana Bread

This is a simple and easy recipe for a delicious and moist gluten free banana bread. Make sure that the bananas are pretty brown - they will mash up better and thus be better incorporated into the batter. I am currently in the process of experimenting with alterations to this recipe so that it can utilize naturally gluten free whole grain flours (such as oat or sorghum) without having to use the pre-packaged gluten free flour with a whole bunch of stuff in it. So far I have not found the ideal replacement or solution, so I am open to suggestions! Serve as a sweet breakfast or even as dessert. Makes 2 loaves (about 16 slices).

Ingredients
- 2 cups all-purpose gluten free flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2 cups mashed ripe bananas (about 4-5 medium)
- 1 cup sugar
- 1/2 cup unsweetened applesauce
- 1/3 cup coconut oil melted but not hot
- 1 tsp vanilla extract
- 2 Tbsp bourbon
- 1 cup walnuts coarsely chopped
Instructions
- Preheat the oven to 350° F, and butter two 8 x 4 inch loaf pans.
- In a large bowl, combine the flour, baking soda, and salt. In a smaller bowl, whisk the eggs, bananas, sugar, applesauce, and oil until well combined. Stir in the vanilla and bourbon.
- Stir the wet ingredients into the dry ingredients until just moistened and well combined.
- Pour the batter evenly between the two prepared loaf pans. Sprinkle the walnuts over the top if the two loaves – about 1/2 cup per loaf.
- Bake for 45-55 minutes or until a knife inserted in the center comes out clean. Cool for 10 minutes in the pan before removing the loafs to cool further. Serve warm or at room temperature.
