Summer Watermelon Salad with Honey Orange Vinaigrette

Honey Orange Vinaigrette
- 1/4 cup orange juice freshly squeezed
- 1/2 tsp garlic minced
- 2 Tbsp honey
- 2 Tbsp fresh chives sliced
- 2 Tbsp apple cide vinegar
- 1/2 cup extra virgin olive oil
- coarse salt and freshly ground pepper
Watermelon Salad
- 2 cups watermelon seedless and cubed
- 1 pint cherry or grape tomatoes halved
- 1/2 cup cucumber seeded and diced
- 1/4 cup pine nuts toasted
- 1/4 cup fresh feta crumbled
Instructions
- Whisk together the vinaigrette ingredients in a medium bowl. Season with salt and pepper.
- In a large bowl, combine the watermelon, tomatoes, cucumber, and pine nuts. Toss with the desired amount of the vinaigrette.
- Sprinkle with the feta cheese and serve immediately.
