• Summer Watermelon Salad with Honey Orange Vinaigrette

    Ingredients

    Honey Orange Vinaigrette

    • 1/4 cup orange juice freshly squeezed
    • 1/2 tsp garlic minced
    • 2 Tbsp honey
    • 2 Tbsp fresh chives sliced
    • 2 Tbsp apple cide vinegar
    • 1/2 cup extra virgin olive oil
    • coarse salt and freshly ground pepper

    Watermelon Salad

    • 2 cups watermelon seedless and cubed
    • 1 pint cherry or grape tomatoes halved
    • 1/2 cup cucumber seeded and diced
    • 1/4 cup pine nuts toasted
    • 1/4 cup fresh feta crumbled

    Instructions

    • Whisk together the vinaigrette ingredients in a medium bowl. Season with salt and pepper.
    • In a large bowl, combine the watermelon, tomatoes, cucumber, and pine nuts. Toss with the desired amount of the vinaigrette.
    • Sprinkle with the feta cheese and serve immediately.
