Herb Marinated Goat Cheese

Marinating goat cheese in olive oil with a smattering of herbs and pepper makes it extra creamy and bursting with flavor. It makes an excellent addition to any number of recipes, but is a key ingredient in the fettuccine with Lacinato kale and caramelized onions. It will last for about two months in the fridge as long as the cheese remains completely covered in oil at all times.

Ingredients

  • extra virgin olive oil
  • 8 oz goat cheese log sliced into 1/2 inch rounds
  • 8 sprigs thyme
  • 10 black peppercorns
  • 4 cloves garlic cut in half and lightly crushed
  • 4 bay leaves
  • 2 sprigs rosemary cut in half
  • 1 dried red chile seeded and sliced into 1/2 inch strips

Instructions

  • Lay the goat cheese in a single layer on the bottom of a dry, wide-mouth jar. Add a sprig or two of thyme, a couple peppercorns, 1 piece of garlic, and a bay leaf, and gently press into the cheese. Pour in enough olive oil to cover the cheese. Continue layering the remaining cheese, seasonings, and oil until all the ingredients are used up. Make sure the last layer of cheese is completely submerged in the oil: so long as it is covered in oil, it should not get moldy.
  • Seal the jar and marinate in the fridge before using, ideally for at least one week, though in a pinch, several hours or a day works too. The cheese should keep for about two months, as long as the cheese is covered in oil, so add oil as needed when removing pieces of cheese to keep it submerged. Bring to room temperature before serving.
  • NOTE: The garlic may turn slightly turquoise in color. This is a natural enzymatic reaction of the garlic to the acids in the other ingredients. It usually does not occur much in the presence of olive oil, but might if you include the chile pepper. It's entirely natural and the garlic is still safe to eat.
