Cucumber Basil Cooler

This is a delicious and refreshing version of a white wine sangria, ripe with summery cucumber and basil. It's light and easy drinking, but does pack some alcohol. I recall the first time my mother made these. Being a hot and humid summer evening in Texas, it was easy for her to suck down a few of them pretty quickly. Needless to say, we were all a little tipsy, but satisfied and refreshed nonetheless.

Cucumber Basil Cooler

Ingredients
 

Basil Infused Vermouth

  • 1 bunch (1 bunch) basil leaves
  • 1 bottle (1 bottle) Dolin Vermouth Blanc

Cucumber Basil Cooler

  • 1 oz (28 ml) basil infused vermouth
  • 2 oz (57 ml) sauvignon blanc or pinot grigio
  • 1 oz (28 ml) Cocchi Americano aperitif
  • 1 tsp (1 tsp) Luxardo apricot liqueur
  • 3 slices (3 slices) cucumber
  • 3 leaves (3 leaves) basil

Instructions

  • Muddle the basil in a bowl and place in a wide mouth bottle, large enough to hold a bottle of wine. Pour in the vermouth and let sit at room temperature for at least an hour. Strain out the basil. Pour the infused vermouth back into the original vermouth bottle to seal and store. Keep in the fridge: it is best up to a month after you make it (but honestly I keep mine a lot longer and it's fine).
  • Fill a wine glass about half-way with ice or more if desired. Add each of the cocktail ingredients, and gently stir to combine. Stir the cucumber slices down into the drink, and garnish with the basil leaves.
