Ingredients
 

Honey Orange Vinaigrette

  • 1/4 cup (62 g) orange juice, freshly squeezed
  • 1/2 tsp (1/2 tsp) garlic, minced
  • 2 Tbsp (2 Tbsp) honey
  • 2 Tbsp (2 Tbsp) fresh chives, sliced
  • 2 Tbsp (2 Tbsp) apple cide vinegar
  • 1/2 cup (118.29 ml) extra virgin olive oil
  • coarse salt and freshly ground pepper

Watermelon Salad

  • 2 cups (304 g) watermelon, seedless and cubed
  • 1 pint (473.18 g) cherry or grape tomatoes, halved
  • 1/2 cup (66.5 g) cucumber, seeded and diced
  • 1/4 cup (33.75 g) pine nuts, toasted
  • 1/4 cup (37.5 g) fresh feta, crumbled

Instructions

  • Whisk together the vinaigrette ingredients in a medium bowl. Season with salt and pepper.
  • In a large bowl, combine the watermelon, tomatoes, cucumber, and pine nuts. Toss with the desired amount of the vinaigrette.
  • Sprinkle with the feta cheese and serve immediately.
